Beating the bird


Sunday is usually a night of culinary adventure for me. A night to end the week the best way possible: dirtying as many dishes as I can.

This dish doesn’t look that appetizing from the photo but what it lacks in presentation it definitely makes up for in taste.

You start by pounding a butterflied chicken breast to make it thinner. Then add ingredients to the beaten bird boob and roll it up before putting it in the oven. I chose goat cheese, green onions, green pepper and 1 clove of garlic. After securing the rolled chicken with a toothpick, I sprinkled some panko breadcrumbs on top. It’d be better if you sautéed these first the create a crisp crust.

I put them in a baking dish with some broccoli, flipped them after 30 mins. Then i cooked them another 15-20 before snapping this pic.
